#Salmoriglio is a traditional #Sicilian #seasoning, also used in Calabria, which is prepared to season grilled meat or fish. The traditional recipe involves mixing olive oil together with cloves of garlic, abundant oregano and lemon juice and black pepper that gives salmoriglio a special aroma. Used especially on grilled swordfish. For fish preparations, parsley is also added, while lemon juice with vinegar can be substituted for meat.
INGREDIENTS 4 tablespoons extra virgin olive oil juice of 3 lemons 1 finely chopped garlic clove 1 teaspoon oregano salt to taste ground black pepper to taste
PREPARATION Pour the oil into a bowl and whisk it gradually add the lemon juice with a tablespoon of hot water. Add the oregano, minced garlic, salt and pepper. Use to season or marinade.
