The dumplings are potato dumplings that are usually served as first course and seasoned in various ways: the four cheeses is one of the tastiest sauces. Here I describe a recipe that allows you to prepare them in 15 minutes.
INGREDIENTS (for 4 servings) About 500g of clean potatoes About 200g of flour 1 egg Salt to taste.
FOR THE SAUCE 100g grated Parmesan cheese 100g grated mozzarella cheese 100g grated provolone cheese 100g grated Romano cheese 100g whipping cream 50g butter
PREPARATION
Cut the peeled potatoes into small cubes and place them in a microwave-safe bowl with a glass of water. Close the bowl with film and cook in microwave for 10 minutes at 750w. Crush the potatoes and let them cool before adding salt, egg and flour. Knead until a smooth and soft dough is obtained.
Roll out the dough with the help of a rolling pin and keep it always floured. The thickness must be 2 cm. Cut strips of 2 cm and divide them into squares. Roll the pieces of dough with a finger on a fork, to make grooves that allow you to hold the sauce. Meanwhile, boil a pot of water and in a saucepan slowly melt the cheeses with butter and cream. When ready, throw the gnocchi in boiling water and drain them as soon as they float. Season the gnocchi with cheese sauce and BUON APPETITO!
