INGREDIENTS

(for 4 servings)

2 cups flour type 0 (Manitoba) 1 ounce fresh brewer's yeast or 2/3 ounce dry yeast 4 tablespoons of extra virgin olive oil 2 teaspoons of salt 1 teaspoon of sugar 1.5 cup water

PREPARATION

First of all activate the yeast in a little warm water together with the sugar for 20 minutes. It will start to make bubbles. Knead the flour, water, yeast, oil and water (even with the help of a kneader). Add the lukewarm water a little at a time and knead until an elastic and non-sticky dough is obtained, adding more flour if necessary. Add salt too at the end.

Put the dough in a closed container that can hold twice the volume. Put the container in a warm oven (120 ° F) and let rise for about 2 hours until the dough volume doubles.
