What does Hunter style mean? - Tuscany Chicken Stew (Cacciatore)

The chicken cacciatore is a traditional #Tuscan recipe, but also very popular across Italy and particularly in the northern/center area. It is a simple but incredibly tasty dish mainly thanks to ingredients like onions, tomatoes, bell pepper and red wine enhancing the flavour of the meat.
 
The origins of this authentic speciality can to be found among poor people using simple ingredients. The recipe is so popular that it has its own national day on the 18th of April. “Cacciatore” actually means “hunter” in Italian and is commonly believed that the first cacciatore recipe had rabbit instead of chicken meat.

INGREDIENTS
 
1 chicken
 
3 stalks of celery
 
1 sprig of rosemary

2 cups of red wine
 
400 g peeled tomatoes

1 green bell pepper
 
1 onion
 
1 clove garlic
 
2 carrots
 
1 bunch of parsley

10 black olives
 
½ cup of extra virgin oil
 
black pepper to taste
 
salt to taste

INSTRUCTIONS
 
Chop chicken into pieces but do not peel off the skin. Heat olive oil in a pan and roast the chicken on both sides until golden. Add finely chopped onions, garlic, the chopped carrots and celery, with a pinch of salt, pepper and rosemary and when the mix has a nice color pour red wine and let it evaporate.
 
Then add the tomatoes and bell pepper, cover with the lid and let it cook on medium heat until the meat is well cooked and soft. In the case chicken becomes dry add a bit of wine.
